Roti

Roti is a flat bread that is consumed world wide, its pronounced 'ro-chi' in Mauritius.

Nothing beats fresh butter melting on a hot roti! This is probably the easiest thing I make at home, it's also another great way to get the kids involved!

Ingredients

500g of self raising flour, plus extra for dusting. (I have used plain flour before and it works too)

1 tsp of salt

3 tbsp vegetable oil, extra for cooking

Method

• Sift the flour and salt into a bowl. Add oil, and water to make a soft dough, add a little more flour or water if you need to. Knead it until smooth.

• Cover and leave to rest for about 20-30 minutes.

• Divide the dough into 12 pieces, dust your surface with some flour and roll each one into a thin circle and sprinkle some oil over them to prevent it from drying. If you have a small kitchen work top you can roll a few out at a time. Mine are all sorts of shapes. My friends kids got involved and they just rolled away, to be honest I can never get them round when I roll them anyway 😂

• Heat a little oil in a large frying pan or some some ghee or butter. Then fry one side until it puffs up then turn it over and fry on the other side too. You'll start to see the brown spots on the roti.

• Once done allow the roti to cool for a few seconds. Wrap in a clean tea towel to keep it fresh!


You can eat this with your traditional curry, use it as a wrap, have it for breakfast, the options are endless.
