Ladob Poul/Daube de Poulet

Daube' means stew in french, we pronounce it 'Dob'. A chicken stew that looks like a curry but doesn't have your typical spices and strength of masala.

You can use different meats and root vegetables for this dish. It's full of flavour - garlic, tomatoes and plenty of thyme!

A lovely dish that is served with rice or bread but you can mix it up and have it with mash or put in with pasta! A perfect meal to warm you up on a cold rainy day 🤗

Ingredients

Vegetable oil

1/2 tsp cumin seeds

1/2 tsp cinnamon

1tsp salt - more if required

1tsp pepper

1 onion - finely chopped

1tbsp garlic and ginger

1 green - sliced (optional)

2 tsp Mauritian curry powder (you can use a normal curry powder)

1kg skinless chicken thighs with bone

2 potatoes - cut in quarters

2 cans of chopped tomatoes (use less if desired)

1 medium tomatoe - chopped

Generous amount of fresh thyme

Handful coriander leaves


Method

• Put some vegetable oil in a saucepan and fry the cumin seeds and cinnamon for a few seconds.

• Add the onions, ginger, garlic, salt, pepper and chilli and cook until soft.

• Stir in the curry powder and then add the chicken.

• Keep turning until the you can see the chicken is cooked on both sides from the outside.

• Add chopped tomatoes and thyme and let it simmer for roughly 10 minutes.

• Add the potatoes, some chopped corriander and some water to just about cover the chicken and potatoes. Reduce heat and cook for about 30-40 minutes or until cooked. Taste and add extra seasoning if needed.

• Serve with rice or bread and garnish with coriander.
